Coffin Bay oysters served with citrus dressing and seaweed salad

(Entree size - serves 6)

Ingredients

6 x ½ dozen Coffin Bay oysters

1 tablespoon dashi (soup stock made from seaweed)

1 tablespoon soja

20 g marinated ginger

10 g chopped fresh coriander

80 g shallots

2 tablespoons of light sugar syrup

Pulp of ½ grapefruit

Juice of 1 lemon

Juice of 1 orange

1 lime for garnish

2 tablespoons olive oil

9 g carrot extract (carrot juice reduction)

70 g seaweed salad (Japanese seaweed with sesame oil)

Dissolve the dashi in the syrup and add the soya, marinated ginger, fresh coriander, shallots, grapefruit pulp, orange juice, lemon juice and the olive oil to the syrup. Add the carrot extract and blend together.

Finely slice the lime and rest in the fridge. 

Open each oyster and place a small handful of seaweed salad on top of each oyster.

Place the dressing into a shooter glass and garnish with the sliced lime.

Serve on rock salt.

Serve with Balgownie Estate NV Premium Cuvée.

Roasted Quail with Raspberries

(Entree size - serves 6)

 Ingredients

 Quail

6 Yarra Valley quail

Maldon sea salt and freshly ground pepper

25 ml red wine vinegar

200 g Yarra Valley raspberries

50 g butter

100 ml best chicken stock

12 fresh sage leaves

 Potato fritters

400 g new potatoes

3 egg whites

1 tablespoon 4 spices

Salt

 To serve

250 g baby spinach

Method

 To prepare and cook quail

Preheat oven to 200 degree c.  Remove neck bones and flaps ensuring the cavity is clean.  Season cavity with salt and pepper.  Place in baking pan, drizzle with oil and cook for 25 minutes.  When skin starts to turn golden colour deglaze the pan with the red wine vinegar and chicken stock, add butter, raspberries and sage.  Cook for at least 5 minutes.

 To cook potato fritter

Whisk egg whites until firm; add 4 spices and a pinch of salt.  Shred potatoes and add to the mix.  Fry fritters in shallow oil.  Cook until golden brown on both sides.

 To serve

Place spinach leaves on each plate, fritter and quail on top and  spoon jus and raspberries on top.

Serve with 2006 Bulong Estate Reserve Cabernet Franc.

Wineries

The Fergusson vineyard was originally planted by the Fergusson family in 1968.  The first commercial vintage was processed in 1973 and subsequent expansion saw the addition of the restaurant in 1975 and the wine sales facility in 1978.

The vineyard is planted to classic French grape varieties including Chardonnay for the white wines and Pinot Noir, Shiraz and Cabernet Sauvignon varieties for the reds. 

Over the past thirty years it has developed an international reputation as a maker of fine wines and provider of a genuinely Australian tourism experience.

The cellar door at Fergusson’s showcases the wines under the Fergusson label.  All of our wines are available for tastings and the Australiana shop enables customers an opportunity to purchase the uniquely Australian products.

Food

The main restaurant with its cathedral ceilings soaring high over the hand sawn refectory furniture and large open fireplace with it’s antique turning spit creates an unmistakable warm Australian ambience.

Catering for international and Australian tourist groups, large parties and weddings, the menu reflects Executive Chef Louise Fergusson’s Culinary Olympic Gold Medallist standards and love of regional produce.  Louise trained in cooking at William Angliss College in Melbourne and represented Australia in the 1980 Culinary Olympics for which she won a gold medal.  In 1982 she was awarded a Victorian Foundation scholarship and was away for two years working at some of the top provincial resorts and restaurants in England, France and Germany.  These included the Ritz (London), Gidleigh Park (Devon), Pierre Orsi (Lyon), Le Canard (Hamburg) and The Aubergine (Munich). 

The restaurant is capable of seating up to 180 people, with a small 20 seat private dining room “Lou Lou’s” also available for that small intimate group.

Looking for something different, enrol in a Master Cooking Class.  Learn the techniques and then enjoy the meal with matching wines.

Our restaurant is open 365 days per year for breakfast and lunch and on Friday and Saturday evenings for dinner.  For group bookings of 10 and more people we will open any night of the week for dinner.

Enjoy a weekend away and explore all that the Yarra Valley has to offer.  Bring the family along and stay in our Homestead with three queen bedrooms with a historic Melbourne Tram attached with one double and two singles, suitable for up to 10 people.

With a restaurant with a capacity of holding up to 180 people we can cater to most conference requirements.  Lou Lou’s Private Dining Room is also available for small groups of up to 20 people.

Karakaberry Mousse
(Serves 6)

Ingredients
250 ml Karakaberry coulis (refer recipe below)
150g sugar
Juice of one lemon
4 leaves gelatin
400 ml semi whipped cream
700 g Karakaberries

Method

Karakaberry coulis
Place 600 g of Karakaberries into stainless steel pot with 250 g of sugar and 100 ml of water. Bring to the boil and simmer for 2 minutes. Allow to cool. Place into a blender and blend until smooth then strain.

Karakaberry mousse
Warm 250 ml of coulis in a pan and transfer into a large bowl. Soak gelatin leaves in water until softened – approximately 2 minutes. Whisk gelatin leaves into coulis until dissolved, then add sugar and cool to room temperature. Partially whip cream and fold into the coulis mix - do not over mix or it will split. Pour into your favorite glass or mould and refrigerate for one hour.

Chocolate base for Karakaberry mousse
Place one packet of chocolate ripple biscuits into a food processor and add 200 ml melted butter. Blend until the biscuits are bread crumb size and start to come together.  Remove the mixture and push crumbs into a round mould, such as an egg ring and push down until compact.

Chocolate mousse
200 g dark chocolate - chopped
250 ml cream

Place the cream into a pan and bring to the boil. Place chocolate in a bowl and when cream has boiled, pour over chocolate and stir until melted. Place mixture into the refrigerator and leave until set – approximately 20 minutes.

Once set, place mixture into a piping bag with a star shaped piping nozzle and pipe the mousse on to the chocolate base.  Place the remaining berries, around the outside of the mousse and gently push into the mousse.

Sugar garnish
Place 200g sugar in a small pot with 100 ml water and bring to the boil. Cook until it turns slightly caramel in colour. Allow to cool slightly, and place a piece of silicon paper on the bench and drizzle the sugar over the paper to form shapes.

To Serve
Drizzle leftover Karakaberry coulis onto a serving plate. Place the Karakaberry mousse onto chocolate base and press sugar garnish into the mousse. Serve with Karakaberry coulis.

De Bortoli Winery and Restaurant were also Hall of Fame winners for their category, Crown Award for Tourism Wineries, Distilleries & Boutique Breweries. This Award recognises wineries that make a significant contribution to the industry. The team at De Bortoli’s also received a Merit Award in the 3AW Award for Tourism Restaurants and Catering Services.

Another major win for the region was the National Trust of Australia (Victoria), Gulf Station Volunteers, who took out the RoyalAuto Award for Outstanding Contribution by a Volunteer/s.

The YARRA VALLEY is one of Victoria’s most spectacular winery regions. Let the breeze usher you along the corridors of grape vines and over the Yarra River as you take in the breathtaking views of mountains that surround the valley. The Yarra Valley is situated only 50 minutes from Melbourne’s city centre. Complimentary transfers are available from every city motel/hotel. MORNING OF FLIGHT:
We meet at ROCHFORD WINES half an hour before sunrise (you will be advised of the exact time the evening before your flight). Whilst having a cup of tea or coffee your pilot will give you a short briefing. You will then be transported to the launch site where you may help with the launch, or stand back and take pictures. Then away we go, drifting gently over the countryside in our beautiful balloon. Your flight will last for approximately one hour. After we make our final landing and pack the balloon away, we head back to ROCHFORD WINES and toast our morning’s flight with a glass or two of Chandon whilst enjoying a hearty breakfast.

CLOTHING:
Comfortable clothing relevant to the season that will not restrict active participation in inflating the balloon, or climbing in and out of the basket should be worn. The air temperature will be the same in the air as it is on the ground. It will get warmer as the morning goes on. We recommend clothing worn in layers, so a jacket or sweatshirt can be removed. Boots, runners or sturdy shoes are appropriate footwear as the grass may be wet. A hat/cap is recommended. Cameras are welcome, carried at your own risk.

There are 54 ensuite rooms with eight more in two self contained cabins. Facilities include a main Conference room capable of seating up to 160 for dining, or 250 theatre style. There are also many other conference rooms of different sizes. There two lecture theatres, one with tiered seats and a capacity of 160 and another one sits up to 92. With their new snow making equipment, and the repairs completed to the picturesque cross country ski trails after the fires in February, Lake Mountain is again looking beautiful, welcomes visitors and will be open throughout the winter.

CMA have been operating a market out of the Yarra Valley Racecourse for 12 years. During this time they have built up a fantastic, varied and interesting market that caters to all tastes and pockets. This well known and respected market has built up a reputation for Australian homemade quality. After the Yarra Valley Racing Club in Yarra Glen declined to renew CMA’s current venue licence, it looked as though the market would be without a base in the Yarra Valley. Luckily CMA were able to secure the future for the market and its stallholders (and the Yarra Valley) through the Healesville Amateur Racing Club Inc. who were able to provide a new home for the market.

“After 12 years of operating and potentially having no place to operate within the Yarra Valley, we are excited to be working on this with the HARC and to be able to run our market out of their fantastic facilities.” Allison Dillon, General Manager of Craft Markets Australia enthused. “We’ve received an overwhelming vote of confidence from our stallholders who are all keen to follow us to the new location”

President of HARC John O’Neill was shocked when he realised that CMA could be potentially lost to the Yarra Valley. “This market is worth over $5 million to the local community. A loss like this to the underlying retail, tourism and accommodation sectors within the Valley, so soon after the Black Saturday fires would be crippling” he said. “Furthermore CMA and HARC have jointly created a community fund to distribute to local community groups. We anticipate the fund to annually contribute up to $20,000 to the local community” he continued. The Craft Markets Australia operated market will run the first Sunday of every month starting the 2nd August at the Healesville Amateur Racing Club on the Kinglake-Healesville Road, Healesville.

The ride was not only a cycling event, but also an important part of the bushfire recovery effort, with $25 from each entry being donated to the Victorian Bushfire Appeal.

· 545 cyclists completed the shorter course
· 1529 cyclists in all attempted to get to the top of the mountain!!
· We raised $38,225 for the Red Cross Fire Relief Fund
· $2120 was donated to community groups involved on the day
· Over $1000 was raised in the rafflle … which had great prizes, including a bike
· Local traders involved had a busy day

The event kicked off on the Friday night with approximately 100 people attending a pre-ride dinner at the Marysville Golf and Bowls Club. The night was catered by Michael Jaeger, previous head chef at The Cumberland in Marysville. The bar was attended by volunteers of the Marysville Golf and Bowls Club and entertainment was provided by Ian Boyd a country musician who volunteered his time throughout the whole weekend.

On a day of perfect weather, the event was opened by Victorian Minister for Tourism Tim Holding and Federal Member Fran Bailey, which was followed by a minutes silence to pay respect to those lost in the Black Saturday bushfires. Murrindindi Shire Deputy Mayor Cr Kevin Bellingham was also present to say a few words, prior to the rides commencing.

Cyclists participated in one of two rides, the 140km ride or the shorter 66km ride, with both rides enduring a tough final leg with the climb from Marysville to Lake Mountain.

The rides commenced from the Marysville Golf and Bowls Club at 8.30am, with riders passing through Buxton, Taggerty, Alexandra, Eildon and Thornton.

The event provided local traders and service clubs such as Fragas Café, Heights Bar and Bistro and The Alexandra Lions Club with the opportunity to cater for cyclists and supporters and make some money on the day.

Ambassador of the event and 5 time Olympian Shane Kelly showed his support for the event by entering the 140km ride. He said the event was a great way for cyclists to give something back to Victorian communities affected by the fires.

“It was an honour to be the event ambassador and it’s great to see cycling playing a part in helping the fire affected communities recover and rebuild” Kelly said.

The finish line of the ride at Lake Mountain provided a festival like atmosphere with various catering outlets, a jumping castle, blacksmithing demonstrations, music and a special appearance by the Lake Mountain mascot Lenny the Leadbeater.

The event would not have been possible without the help from several volunteer groups including the Marysville SES, The Community Emergency Response Group, Alexandra Rotary Club, Taggerty Progress Group, Buxton Progress Group, Marysville CFA and the Marysville Girl Guides.

Organisers of the event CycleSport Victoria, Lake Mountain Alpine Resort and Murrindindi Shire Council were all very pleased with the success of the day and felt it went a long way in helping the bushfire recovery effort.

Lake Mountain Chief Executive Officer Richard Rogerson highlighted the importance of the event by saying “A large number of the cyclists that rode on Saturday are also keen nordic skiers at Lake Mountain and for them to visit outside of the snow season to participate in a non snow related event is great to see.”

It has been snowing at Lake Mountain on and off for the past 24 hours and we now have 20 plus cm of snow.

Snow mobile rides will be starting tommorow.

For those who missed the news:
On Wednesday 1st July 2009 at approximately 4.45pm a fire at Lake Mountain Alpine Resort destroyed the resorts Ski Hire/Retail and Ski School outlets.

The quick response from Lake Mountain staff and the CFA ensured the fire was contained within 15 minutes and damage was kept to a minimum.

The fire has caused an estimated $500000 worth of damage to the main Visitor Centre, adding to the significant loss that was encountered through the Black Saturday bushfires.

The fire burnt the resorts equipment including toboggans, boots, skis and poles, along with the computer and eftpos systems and building infrastructure. The building has suffered severe smoke damage and has incurred loss of power, telephone and internet connections as a result of the fire.

Staff and management at Lake Mountain have worked tirelessly since February to get the resort operational for snow season 2009 and for this to happen is just disastrous.

With the positive attitude that saw the resort open after the Black Saturday bushfires, management will ensure that the Visitor Centre is up and running as soon as possible.

In the meantime limited power has been restored which has enabled a day shelter and toilet facilities to be opened. Catering vans will also be used until Heights Bar and Bistro is re-opened in the main building.

Visitors are still encouraged to visit Lake Mountain and enjoy the natural beauty and snow facilities which the resort has on offer, however should be reminded to come prepared and utilise the facilities in nearby Marysville for food and equipment hire.

The resort gate entry fee of $35 will be waived until this weekend, when facilities plan to be back up and running.

Some specifics:

• Damaged buildings have been cleared away and new temporary buildings have been put in place. There are two day shelter buildings, ski patrol and toilet facilities. Lake Mountain has employed 40 extra staff and many local contractors complete the work required to ensure the resort is fully operational for winter. These have been much needed jobs to local survivors from the fires.
• Lake Mountain will employ another 100 to 120 extra staff over the winter.
• Kellys paddock, Snowy Hill and Arnolds Gap facilities have been repaired.
• New snow grooming machines and snow mobiles are on their way.
• Snow mobile rides will be available this year. You can drive your ‘own’ snow mobile as part of a guided tour. 
• A new snow making system (that can make snow at higher temperatures) is on its way from Europe. This will enable more snow making than ever before!! Details below.
• Ski trails have been cleared, repaired and new drainage culverts built.
• Toboggan slopes sustained very little damage. They are ready to go!!
• Fire damaged dangerous dead trees have and are being be removed
• All essential services (power, water, telecommunications and sewerage) have been re established.
•  Main visitor centre ski hire, ski school, Heights bistro, resort administration and the lower level day shelter were NOT damaged.
• The road from Marysville all the way to the Lake Mountain village has been be repaired and resurfaced where required. 
• Part 1 of a great new signage system will be installed. Signs start from Marysville and extend to the furthest ski trails.
• The Marysville Lake Mountain fire relief cycling event is being held on the 2nd may. This event will attract 1500 plus cyclists to our amazing area. This will be a fantastic promotional activity for the region and will announce to all that we are open for business
•  The Lake Mountain website will be the main source of the latest information. The site site will switch to winter mode in early May.
• To assist local and regional businesses recover, accommodation, restaurant and associated tourism businesses will be offered FREE advertising on the Lake Mountain website for 2009. Please fill in the online forms found on www.lakemountainresort.com.au. Click the accommodation tab then click “on line form” This is a fantastic opportunity to access the 40,000 unique visitors a month that use our website. We must find accommodation for those visitors that want to stay a few days in our beautiful area.
• A visit to the snow at Lake Mountain will be a positive way to help the bushfire recovery effort. 
• The Resort is now OPEN. 

Snow Season Opening

SNOW for the opening of the ski season at Lake Mountain

Lake Mountain Alpine Resort has some of the latest snow making equipment on its way from Europe. The WYSS system will enable the resort to make snow at much higher air temperatures … at up to 25 degrees C.

This system has been used in Europe to create ski race courses around villages and towns when natural snow falls have failed.

The WYSS system is due to arrive mid May. It will be installed immediately and we plan to be making snow before the June long weekend.
